Masayoshi

Chef Masayoshi Baba brings the jewel-box luxury of a Japanese sushi counter to Vancouver at his namesake restaurant. The counter seats offer the best view as he crafts each course, though the four tables are just as enjoyable. His omakase lets British Columbia's bounty lead, with local fish in Edomae-style nigiri, opening with a chilled dish of uni, junsai, mountain yam, crab and tomato dashi gel, followed by sea bass with wakame and pudding-soft abalone.
