In Québec City, Légende is led by Elliot Beaudoin, a former finalist on TV's Les Chefs! and past associate of Tanière³. The kitchen follows a strictly locavore approach, using only local ingredients and avoiding imports such as chocolate, pepper, citrus and vanilla, while putting little-known indigenous ingredients to clever use: think butter-fried halibut coated in vegetable charcoal with fermented cherry beurre blanc, or smoked venison heart on a delicate tartlet.
