Chez Boulay – Bistro Boréal

A bistro of northern, boreal cooking on rue Saint-Jean in Old Quebec, inside the Hotel Manoir Victoria, run since 2012 by chefs Jean-Luc Boulay and Arnaud Marchand. French technique is applied to the products of the boreal forest and of Quebec, so elk, trout, elderflower and Labrador tea all find their way onto the menu. Weekday lunch is concise and easy on the wallet, brunch runs at weekends, and dinner brings more elaborate plates such as pate en croute, braised Quebec beef cheek, or a buckwheat tartlet with apple and sarsaparilla. It is listed as MICHELIN Selected.
