Échaudé

A French bistro on rue du Sault-au-Matelot in Quebec City's Lower Town, near the Old Port and Bassin Louise, open since 1984 and taken over by its own employees about ten years ago without straying from its origins. Dinner is a la carte and classically French, with wagyu tartare, halibut in beurre nantais or duck magret with sauce Choron, while the lunch menu is rewritten daily around seasonal produce from the greater Quebec City area. White tablecloths and mirrors set the room, and the cellar runs to more than four hundred references chosen by the sommelier. It is listed in the MICHELIN Guide.
