Botanist

Botanist is a modern Canadian restaurant on Canada Place in downtown Vancouver, situated within the Fairmont Pacific Rim hotel. Recognised by the Michelin Guide, the restaurant features four distinct venues including a Cocktail Lab, Garden, main Dining Room, and a TASCHEN Library. Executive Chef Hector Laguna leads a kitchen that highlights regionally sourced Pacific Northwest ingredients, with an emphasis on sustainably farmed produce and Ocean Wise recommended seafood. Signature dishes include crab chawanmushi, seared sablefish with cod-stuffed morels, and seasonally driven vegetable preparations. The space is anchored by a dramatic 55-metre origami light installation by artist Joseph Wu.
