The restaurant specialises in Edomae-style sushi, where fish — sourced exclusively from Japan — is carefully aged to develop deeper, more complex flavours. Rice from Niigata prefecture, served warm with Chef Saito's signature blend of aged vinegars, completes each piece. The intimate setting accommodates a small number of diners per service, creating a highly personal experience priced at CA$680 per person.
