Behind an unremarkable exterior, Chef Juhyun Lee's Sushi Hyun is a sophisticated omakase oasis that earned its first MICHELIN Star in 2025, when Lee also received the Vancouver Young Chef Award. Exquisite seafood, hand-made ceramics and a hinoki counter from a tree over two centuries old set the tone for perfectly tempered Edomae nigiri and a comforting rice dish of fried karei flounder that nods to his Korean background, with wines and sakes he selects himself.
