Saison is a contemporary regional restaurant located at 1380 chemin Sainte-Foy in the Saint-Sacrement neighborhood of Quebec City, Quebec. Opened on June 11, 2025, the establishment was founded by Chef Étienne Nadeau and Sandrine Grenon, the creative team behind the city's acclaimed Ambre Buvette. Housed in a converted pub that features a raw and minimalist design paired with a long dining counter, the restaurant embraces a 'fun dining' concept centered on authenticity, immersion, and shared experiences. The kitchen specializes in farm-to-table cuisine, prioritizing local Quebec producers and seasonal ingredients. Signature dishes include a 72-hour slow-cooked pork belly in red wine sauce, local rainbow trout with a white wine sauce and rhubarb, and a classic beef tenderloin served with a maple-infused sauce. Notably, the establishment operates under a hospitality-included model with tips built into the pricing. Shortly after its debut, Saison achieved significant recognition, being named a recommended restaurant in the MICHELIN Guide 2026.
