Niwa

Niwa is at 1875 Powell Street in Vancouver, run by chef and owner Darren Lee, who offers a distinctly Vancouver take on Japanese cooking in a small, minimalist room. The kitchen focuses on peak-season produce and does its own whole-animal butchery. The menu changes often and is served as a tasting menu or as shareable à la carte dishes. A whole Berkshire pig, for example, goes into a country pâté, while its loin might be paired with cauliflower and garlic scape miso. Desserts follow the seasons too, such as ripe musk melon with basil cucumber granita. Niwa was listed in the 2026 MICHELIN Guide Vancouver.
