Fat Rabbit

A restaurant and whole animal butcher shop on Geneva Street in St. Catharines, Ontario, open since September 2023 and led by chef Zach Smith. Meat comes from local farms working with regenerative practices, and the kitchen breaks down whole animals with a zero waste approach, curing its own charcuterie and grilling excellent steaks over charcoal. It has been recognised in the MICHELIN Guide in successive years and has placed on Canada's 100 Best, drawing diners who drive in from Toronto.
