Candide

A restaurant set in a former presbytery in Montreal's Little Burgundy, the address of chef John Winter Russell. Exposed red brick, old parquet floors and tables built from church pews frame a room with a counter facing the kitchen. There is a single set menu, rewritten every month around the market and the season, built entirely on carefully chosen local ingredients, in modern and inventive dishes such as grilled broccoli with lemon balm vinegar or barbecued guinea fowl with apple puree. It is listed as MICHELIN Selected in the guide for Quebec.
