Sushi Nishinokaze

Sushi Nishinokaze is a minimalist, traditional fine-dining sushi counter in Montréal that earned its first MICHELIN Star in 2026. Japanese chef Vincent Gee takes a demanding, respectful approach to Edomae tradition, presenting fish, mostly from Japan and supported by excellent Canadian produce, in a traditional box at the start of service. Pesticide-free rice stored in straw baskets is seasoned and tempered to suit each fish's fat content, with highlights such as Nova Scotia shrimp, bluefin tuna and vinegared kohada.
