In a late-19th-century house in the St. Lawrence village of Deschambault, this Biosphere-certified restaurant is run by a young couple. Chef Mathieu Janes works exclusively with small producers, sourcing most ingredients from Portneuf County apart from coffee, some citrus and fish, and his set menu, changing roughly every two months with a vegetarian version, plays with daring sweet and sour pairings such as duck with red cabbage, radicchio and blackcurrant.
