Marcus Samuelsson's restaurant on the third floor of Montréal's Four Seasons Hotel, whose bay windows open into a terrace when the weather warms. The chef, of Ethiopian heritage, raised in Sweden and famed in New York, offers an eclectic, seafood-forward menu of lobster, crab, oysters, Dover sole and caviar, plus lamb chops and wagyu.
