LORE, at 100 Pine Street in Collingwood, Ontario, is owned by Jeremy and Cassie Austin, the couple behind The Pine, a MICHELIN-starred restaurant in Creemore. Jeremy Austin is executive chef, with Evaristo Cajili as chef de cuisine. The contemporary Canadian menu reworks North American comfort food with modern technique, with dishes such as a holiday shrimp ring, a French onion cigarette and a steak frites tartare served on a hashbrown. LORE was listed in the 2026 MICHELIN Guide Toronto & Region.
