Behind a discreet red-brick façade, self-taught chef Hiroshi Kitano cooks ingredient-led Japanese bistronomy for a loyal crowd of regulars. A handful of tables and a counter around the kitchen host sushi and sashimi, crispy karaage with yuzu mayonnaise, chirashi, duck mazemen and the star of the show, uni carbonara with sea urchin cream and pecorino.
