Founded in Nagoya, Japan in 2010 by Kenichi Kaji, Kajiken is a leading global Abura Soba (soupless ramen) specialty chain. The brand is known for its signature soupless ramen, featuring chewy handmade thick noodles developed in collaboration with Michelin-starred chef Yasuji Morizumi, and a secret oil sauce. With over 100 locations worldwide, its California branch has received a Michelin Bib Gourmand recognition. Following expansions into Singapore, Shanghai, and Sydney, Kajiken officially launched in North York, Toronto in 2025, bringing its unique noodle culture—where diners mix in vinegar and chili oil themselves—to the North American market.
