Miku is a Japanese restaurant at 200 Granville Street in downtown Vancouver, situated along the Burrard Inlet near Canada Place. Originally established in Coal Harbour in 2008, Miku is credited as the pioneer of Aburi flame-seared sushi in Canada, a technique developed by owner Seigo Nakamura. The Aburi method uses binchotan Japanese charcoal to lightly sear each piece, caramelising house-crafted specialty sauces paired with each variety of fish. Executive Chef Kazuhiro Hayashi leads the kitchen, drawing on fresh Ocean Wise recommended West Coast seafood and seasonal local ingredients. The signature Aburi salmon oshi sushi, prepared with wild sockeye salmon, jalapeño, and a proprietary house sauce, is among the most celebrated dishes. Recognised by the Michelin Guide, Miku is well-suited for harbour-view dining, date nights, and celebratory meals in downtown Vancouver.
